When It’s Cold Outside

So according to my weather app on my phone, the next couple of days are going to be FREEZING!!!!!

Like let your faucets drip so you don’t burst a pipe freezing!! Or more like my utility bill gonna be high because I am running the heat!! There is no way that I will be leaving my house unless I am going to work or school. Im still debating the school issue. LOL Naw I’m going, I spent my hard earned money for this MBA.

So with the upcoming freezing temperatures, I decided I wanted to be warm and cozy. I figured that soup would be perfect to eat while under my heating blanket and watching Brooklyn Nine Nine. As always, I traveled to Pinterest and looked up some recipes. I wanted to try potato soup because my best friend sent me pictures of her soup she made and it was looking so good. Now because I am a vegetarian there are some adjustments that was made to her recipe. It still turned out very well.

  • 3 table spoons of butter
  • 1 cup of diced onions
  • 1/4 cup of all-purpose flour
  • 2 cups of Worthington FriChik broth
  • 2 cups of warm milk
  • 1.5 pounds of potatoes (boiled and cut)
  • 1 cup of cheese
  • 1/2 cup of sour cream
  • 1 teaspoon of salt
  • 1/2 black pepper
  • garlic powder

So as I said earlier, I am a vegetarian so I did not use chicken broth like it was mentioned in the original recipe. I used the juice from a can of Worthington FriChik I had opened a few weeks ago. I usually freeze the juice from different foods so that I can season other things later on. Also for cheese, I am allergic to it so I used Go Veggie (non dairy) cheese. I don’t normally buy this cheese because it doesn’t melt too well but it melted great for this recipe. It was stringy like real cheese too! I was very proud of it.

This is an easy recipe. It’s kind of a throw everything in a pot and let it marinate. I wish I had a crock-pot because this recipe would have been an awesome crock-pot dinner.

1. Boil potatoes

2. Cut up the onions (don’t cry! ) Saute them with butter.

3. Add the flower to the onions and stir.

4. Stir in the broth until combined.

5.  Stir in the milk and sour cream.

6. Add potatoes, and continue cooking until the mixture reaches a simmer, but is not boiling.

7. Add cheese.

8. Add salt, pepper, and garlic until satisfied.

9. ENJOY!!!!
