Thanksgiving (Enchiladas)

I didn’t really have a Thanksgiving this year. I worked all day! But my best friend showed me some love by bringing me dinner to work. It was amazing!!! Even though I didn’t get to sit around the table with my family or friends I still made a few things for other people for their Thanksgiving. Let this be known, I am not fond of cooking. I hope to marry someone who LOVES cooking so I won’t have to so much. *crosses fingers* I cant help it!! Growing up, and still today, my dad is the cook! My mom never had or has to cook. Now she can, don’t get me wrong, but she does NOT have to lift a finger in the kitchen. I aspire to be just like her!! Lol

Even though I don’t like to cook, there are times when I am hungry enough that I venture onto Pinterest and I find a recipe to cook. On this occasion I made Quinoa Enchiladas, Sweet Potato Pie, and Mixed Berry and Angel Food Cake. Desserts will be another post.

I cannot remember what site I got the enchilada recipe from because I used like three and combined them into one to make what I wanted. But I can tell you what I used. I am a vegetarian and I am allergic to cheese. I am NOT a vegan. I eat all other dairy products.

Ingredients:

Quinoa, tortilla wraps, red enchilada sauce, griller crumbles, Daiya cheddar cheese, sour cream, chopped green chiles, chilli beans and corn.

Directions:

So off the top of my head this is how I made it. I cooked the griller crumbles (Morningstar product) for a min, season it with garlic and onions. I then mixed, chili beans, griller crumbles, sour cream, chopped green chiles, cheese, and corn in bowl. I mixed it well an tasted it a little bit to see if I liked the taste. I added some salt, pepper, and cumin. While I was doing that, I cooked the Quinoa. BTW, this was my first time cooking Quinoa and I learned that less is way more!! Lol Quinoa expands!! Once the enchilada sauce was warm enough, I pour the sauce into the pan and coated it. I then took the tortilla wraps and filled them with the mixture from the bowl and rolled them up. The open side flat onto the pan. Once I filled the pan with the wraps, I then pour more enchilada sauce on top of the enchiladas, and then poured the Quinoa on top. Once that was evenly spread, I poured cheese on top. Placed it in the oven for about 15 minutes and TA-DA, yummy enchiladas!!!!

It was a great hit, even for my friends who eat meat and cheese, they loved it!!! Has anyone else tried this?? Let me know how it turned out!!
